Spam and tomato are one of the best food combinations; that is why my cheesy spam and rice casserole is so addicting and delicious!

This casserole is inspired by one of my favorite childhood dishes, my dad’s spam, and ketchup fried rice! We all have that childhood dish that is comforting and brings a smile to our faces.

I know it may seem weird to add ketchup to your fried rice, but the savouriness of the spam plus the tangy and sweetness from the ketchup is seriously a match made in heaven. That’s why for this casserole, we will also be adding ketchup!

Cheesy Spam and Rice Casserole is super affordable and easy to make at home.

You only need day-old rice, spam, ketchup, tomato, onion, cheese, and soy sauce. There are a few secret steps that my dad does that make this cheesy spam and rice casserole extra special!

  • First, pan-fries the spam until it becomes crispy. This simple step will add great texture to the dish.
  • Second, use the leftover oil rendered from the spam to pan-fry the tomato and onion, this will add tons of flavor to the dish. 
  • Third, make sure to ALWAYS use day-old rice. This way, the rice will soak up all the delicious sauce from the rice, which makes it extra creamy and flavourful.

Ingredients 

  • 1 can of Spam, chopped into bite-size pieces 
  • 2 tomatoes, chopped 
  • ½ onion, chopped 
  • 4 tablespoon ketchup 
  • 3 tablespoon soy sauce 
  • A pinch of black pepper 
  • 3 cups rice, cold cooked rice 
  • 2 cups shredded cheese 
  1. Turn the heat to medium-high, and pan-fry the spam for 3-4 minutes or until crispy. Remove and set aside.
  2. Add in tomato and onion, and saute for 2-3 minutes or until tomato becomes soft.
  3. Next, season with ketchup, soy sauce, and black pepper. Mix well and cook for another 1-2 minutes. 
  4. Finally, add in the rice and spam. Mix well making sure all the rice soaks up all the sauce. 
  5. Finish off by sprinkling cheese, cover, and let it cook for another 2 minutes or until cheese is fully melted.
